Bold Caribbean flavour. No boring meals.
This jerk tofu recipe is my way of bringing those bold, smoky, fiery Jamaican flavours into a proper plant-based dinner that actually satisfies. Not the bland tofu situation we’re not here for.
Prep 1 hour | Cook 15 minutes | Total 1 hour 15 minutes
I grew up around Jamaican food, so jerk seasoning was never just “something spicy.” It had depth. It had attitude. Just like my browning sauce. You could smell it before you even saw it. And if it didn’t have that balance of heat, herbs, and that slightly sweet, tangy kick? It just wasn’t right.
Now listen… tofu gets a bad reputation, but that’s only because people don’t season it properly. When you do it right — press it, marinate it properly, and cook it until it’s crispy — it soaks up flavour like a dream.
This jerk tofu recipe does exactly that. We’re talking crispy edges, juicy centres, and that rich jerk coating that clings to every bite. And yes… we’re making skewers because it just hits differently.

Ingredients You’ll Need for Jerk Tofu Recipe

Let’s keep this real and flexible.
- Firm tofu (pressed well — I press mine for a few hours)
- Lemon juice
- Dark soy sauce
- Paprika
- Dried thyme
- All-purpose seasoning
- Oregano
- Apple cider vinegar
- Wet jerk seasoning (store-bought or homemade — I’ll be sharing my version in another post)
- Cornflour (for that crispy coating)
- Oil for shallow frying
- Fresh chives (to finish)
A quick note from me:
I always say this — seasoning tofu is not the time to be shy. Tofu is like a sponge. If you under-season it, that’s exactly what you’ll taste.
How To Make Jerk Tofu Skewers Step by Step
Step 1: Press the tofu properly
Start by removing the tofu from the packet and draining off any liquid. Wrap it in a clean tea towel or several sheets of kitchen paper, then place something heavy on top like a skillet, chopping board, or a few tins. Leave it to press for at least 30 minutes, but if you have a couple of hours like I usually do, even better. The more moisture you remove, the more flavour the tofu can absorb and the crispier it becomes when cooked.
Step 2: Break and season the tofu
Once pressed, break the tofu into chunky uneven pieces using your hands rather than cutting neat cubes. Those rough edges catch seasoning better and give you more crispy bits later, which is exactly what we want. Add the chunks to a bowl, then squeeze over lemon juice and add dark soy sauce, paprika, thyme, oregano, all-purpose seasoning, apple cider vinegar, and your wet jerk seasoning. Mix gently but thoroughly so every piece is coated.

Step 3: Marinate for maximum flavour
Cover the bowl and leave the tofu to marinate for at least one hour in the fridge. If you can leave it overnight, do that — the flavour gets deeper, richer, and much more intense. Give it another stir before cooking so any seasoning sitting at the bottom gets redistributed.

Step 4: Thread onto skewers
Take your marinated tofu and thread 4 to 5 chunks onto each skewer. If you’re using wooden skewers, soak them in water for 20 minutes first so they don’t catch or burn while cooking. Don’t pack the tofu too tightly together; a little space helps the heat circulate and crisp the edges.

Step 5: Coat in cornflour
Sprinkle cornflour onto a plate or shallow bowl, then gently roll each skewer until lightly coated. You don’t need a thick heavy layer — just enough to create that lovely crisp shell once fried. This step makes a huge difference, so don’t skip it.

Step 6: Shallow fry until golden
Heat a shallow layer of oil in a frying pan over medium heat. Once hot, add the skewers carefully and cook for several minutes on each side, turning gently until the tofu is golden brown and crisp all over. Don’t rush this part by using high heat, or the outside can burn before the inside heats through.

Step 7: Finish with jerk sauce and chives
Once cooked, transfer the skewers to a plate lined with kitchen paper for a minute. Spoon over extra wet jerk sauce while they’re still hot so it clings beautifully to the tofu. Finish with chopped fresh chives and serve immediately while everything is crispy and full of life.
What To Serve With Jerk Tofu
Now listen… this is where you turn it into a full Jamaican vegan dinner.
You already know I’m reaching for something hearty on the side. A good rice situation is essential, which is why I love pairing this with bold, comforting dishes like my Easy Vegan Chilli Recipe — it brings that same rich, satisfying vibe to the plate.
If you want contrast (and you should), something fresh and crunchy works beautifully. I always balance spicy food with something crisp like Crispy Rice Salad Recipe, because that texture combo? Elite.
And if we’re keeping it properly Caribbean-inspired, you already know fried plantain belongs here. Sweet, soft, caramelised plantain next to spicy jerk tofu recipe is just common sense. You can also build this into wraps, bowls, or serve it with roasted veg if you’re keeping things lighter.

Variations
Because we like options.
- Make it milder by reducing the jerk seasoning or skipping Scotch bonnet
- Turn it into a bowl with rice, slaw, and avocado
- Use it in wraps for an easy lunch situation
- Bake or air fry instead of shallow frying if you prefer
- Add peppers and onions to the skewers for extra flavour
Tips for Success
Don’t skip pressing the tofu
This is the difference between flavourful tofu and watery disappointment. Pressing removes excess liquid so the tofu can soak up your marinade properly and crisp up when cooked.
Marinate longer if you can
An hour works well, but overnight gives the best flavour. If I know I’m making this the next day, I always marinate it the night before.
Keep the heat medium
Too high and the coating burns before the tofu crisps. Medium heat gives you that golden crust without drama.
Use enough seasoning
Tofu needs confidence. Taste your marinade before adding the tofu and adjust if needed.
Don’t overcrowd the pan
Cook in batches if necessary. If the pan is packed, the tofu steams instead of fries.

Storage Tips for Jerk Tofu Recipe
If you have leftovers, let the jerk tofu cool fully before storing. Putting hot food straight into the fridge creates steam and softens the coating.
Transfer the tofu to an airtight container and refrigerate for up to 4 days. If possible, store any extra sauce separately so the tofu stays crisp for longer.
To reheat, the air fryer is the best option. Cook at 180°C for 3 to 5 minutes until hot and crisp again. You can also reheat it in a frying pan over low heat with a tiny splash of water if it looks dry.
The microwave works for convenience, but the coating will soften.
You can freeze the cooked tofu in a freezer-safe airtight container for up to 3 months. Defrost overnight in the fridge before reheating.

FAQ Frequently Asked Questions:
Is jerk tofu very spicy?
That depends on the jerk seasoning you use. Some brands are fiery, while others are much milder. If you’re sensitive to heat, start with a small amount and build up slowly.
What tofu works best for this recipe?
Firm or extra firm tofu is best because it holds its shape and crisps nicely. Softer tofu is lovely for other dishes, but here it can break apart too easily.
Can I bake these skewers instead of frying?
Absolutely. Bake at 200°C (400°F) for 25 to 30 minutes, turning halfway through. They won’t be identical to fried, but they’ll still be delicious.
Can I air fry jerk tofu skewers?
Yes, and it works really well. Air fry at 200°C for around 12 to 15 minutes, turning halfway, until golden and crisp.
Is this authentic Jamaican jerk?
This is a plant-based recipe inspired by traditional Jamaican jerk flavours I grew up around — bold seasoning, heat, herbs, tang, and depth. It respects those flavour roots while using tofu as the star.
Can I make it ahead of time?
Yes. You can marinate the tofu the night before, then cook it fresh the next day. That’s actually one of my favourite ways to do it.

- tbsp lemon juice (about 1 medium lemon)
- 2 tbsp dark soy sauce
- 1 tsp paprika
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp all-purpose seasoning
- 1 tbsp apple cider vinegar
- 1 tbsp wet jerk seasoning (store-bought or homemade, to taste)
- 1 cup cornflour
- 4 tbsp olive oil, for shallow frying (or as needed)
- 1 tbsp fresh chives, finely chopped
Optional for Serving
- Rice and peas
- Fried plantain
- Fresh salad
Instructions
- Press the tofu. Remove the tofu from the packet and drain away any liquid. Wrap it in a clean tea towel or kitchen paper, then place something heavy on top such as a frying pan or a few tins. Leave to press for at least 30 minutes, or longer if you have time, to remove excess moisture.
- Break the tofu into chunks. Once pressed, break the tofu into chunky bite-sized pieces using your hands. Rough edges help the tofu become crispier when cooked and hold onto the marinade better than smooth cubes.
- Make the marinade. Place the tofu chunks into a large bowl. Add the lemon juice, dark soy sauce, paprika, dried thyme, dried oregano, all-purpose seasoning, apple cider vinegar, and wet jerk seasoning. Mix gently until every piece is well coated.
- Marinate the tofu. Cover the bowl and place in the fridge for at least 1 hour. For deeper flavour, marinate overnight. Stir once before cooking so the seasoning is evenly distributed.
- Prepare the skewers. Thread 4 to 5 tofu chunks onto each skewer. If using wooden skewers, soak them in water for 20 minutes first to help prevent burning.
- Coat with cornflour. Place the cornflour onto a plate or shallow bowl. Lightly roll each skewer in the cornflour until coated on all sides. This helps create a crispy outer layer.
- Shallow fry the skewers. Heat the oil in a large frying pan over medium heat. Carefully add the skewers and cook for 3 to 4 minutes per side, turning gently, until golden brown and crispy all over.
- Finish with extra jerk sauce. Remove the skewers from the pan and place briefly on kitchen paper to absorb excess oil. Spoon over a little extra wet jerk sauce while still hot.
- Garnish and serve. Sprinkle with chopped fresh chives and serve immediately with rice and peas, fried plantain, salad, or your favourite sides.
