Bold Caribbean flavour. No boring meals.
Honey roasted carrots are made by tossing carrots with olive oil, honey, garlic, salt, and pepper, then roasting at 200°C for 25–35 minutes until tender and caramelised.
I’ve made these more times than I can count, and I’ve found you really don’t need anything fancy — just a few ingredients, the right oven temperature, and a couple of small tweaks that make all the difference.

Ingredients You Need To Make Honey Roasted Carrots
- Carrots
- Garlic
- Olive oil
- Honey
- Sea salt
- Ground black pepper
- Fresh parsley (to finish)
I like to keep this really simple, but each ingredient has a purpose. I always use sea salt because it gives a cleaner, slightly sharper flavour that balances the sweetness of the honey properly. And I go for ground black pepper instead of cracked — it mixes through the glaze evenly instead of sitting in random bites.
Fresh garlic is non-negotiable for me here. It adds that savoury depth that stops the dish from leaning too sweet.
How to Make Honey Roasted Carrots
Step 1: Prep the carrots
Start by chopping your carrots into evenly sized pieces. I usually go for batons or diagonal chunks — nothing too small. The key here is keeping them similar in size so they cook at the same rate. Uneven carrots = some burnt, some underdone… and we’re not doing that.

Step 2: Build the glaze
In a bowl, add your olive oil, honey, sea salt, and ground black pepper, then give it a good mix. I always mix the seasoning first before adding anything else — it helps everything distribute properly instead of clumping.
Then stir in your chopped garlic. Adding it at this stage lets it coat properly and infuse the oil and honey mixture.

Step 3: Coat the carrots
Add your chopped carrots into the bowl and mix everything together until they’re fully coated. Take your time here — every piece should be glossy and covered.
This is what helps them roast evenly and develop that slightly sticky finish.

Step 4: Roast until caramelised
Transfer the carrots to an oven dish and spread them out in a single layer. This part matters more than people think — if they’re piled on top of each other, they’ll steam instead of roast.
Roast in a preheated oven at 200°C (fan) for about 25–35 minutes, turning halfway through. You’re looking for soft centres with slightly golden, caramelised edges.
According to BBC Good Food, roasting at a higher temperature helps vegetables caramelise properly, which is exactly what we want here.
Step 5: Finish and serve
Once cooked, transfer to a serving dish and sprinkle with freshly chopped parsley. That little bit of freshness at the end really lifts everything.
How to Get Perfectly Roasted Carrots
If your carrots have ever come out soft but not roasted, this is why:
- Don’t overcrowd the pan — give them space or they’ll steam
- Use high heat — 200°C is where the magic happens
- Dry your carrots properly — water = no caramelisation
- Don’t rush it — that golden edge takes time
Carrots naturally contain sugars, and when roasted properly, those sugars caramelise — creating that sweet, slightly sticky finish. You can read more about how this works via Harvard T.H. Chan School of Public Health, which explains how cooking enhances natural flavours in vegetables.
Roasting at high heat helps bring out natural sweetness and caramelisation in vegetables, which is exactly what we’re aiming for here. You can find more roasting tips here.
FAQ Frequently Asked Questions
Best honey roasted carrots recipe — what makes this one work?
It’s the balance. The honey brings sweetness, the garlic adds depth, and the roasting method creates that caramelised finish. Plus, keeping everything evenly coated makes a big difference.
Can I make honey roasted carrots in the air fryer?
Yes, but they won’t caramelise quite the same. If you do, cook at around 180°C and shake halfway through.
Why are my carrots not caramelising?
Usually one of three things: the pan is overcrowded, the oven temperature is too low, or there’s too much moisture. Fix those, and you’ll see the difference straight away.
Can I make honey roasted carrots without honey?
You can swap honey for maple syrup or agave for a plant-based version — it works just as well and still gives you that sticky glaze.
