Ingredients

  • 1 med crusty loaf of bread (baguette, sourdough or ciabatta all work great)
  • 2 large garlic bulbs
  • 125 grams vegan butter, softened
  • 1 tbsp tahini
  • 1 tbsp chilli flakes
  • 1/4 tsp Salt and coarse black pepper, to taste
  • Vegan cheese (mozzarella + parmesan-style mix works beautifully)
  • 2 med ripe plantains, sliced
  • 2 tbsp honey (or maple syrup/agave for vegan option)
  • Fresh parsley, chopped
  • Chilli garlic oil

Instructions

  • Roast the Garlic
    Preheat oven to 180°C / 350°F. Slice the tops off the garlic bulbs. Place on foil, drizzle with chilli garlic oil, and sprinkle with salt and pepper. Wrap tightly and roast for 1–1hr15 until golden and caramelised. Let cool.
  • Make the Garlic Butter
    Squeeze out the roasted garlic into a bowl. Add softened vegan butter, tahini, chilli flakes, salt and black pepper. Mix until smooth and well combined.
  • Fry the Plantains
    Slice ripe plantains and pan-fry in a little oil until golden on both sides. Set aside.
